Summertime Salsas on a Gulf Coast Vacation

Yes, fresh salsa with sun-ripened flavors make for the perfect snack or accompaniment to a fresh meal grilled over an open flame.

 

If you are driving in to stay with us this summer and want a real treat, be sure to stop at one of the many farm stands along the routes in Alabama, Georgia, or Mississippi. Flying in? No problem, you should be able to find plenty of fresh ingredients at a local grocery store. Either way, mix up your recipe in the morning and it should be a melody of flavors just in time for lunch al fresco or a sunset snack. 

 

 

Easy Breezy Cherry Tomato Salsa Recipe

 

What You’ll Need:

 

  • 2 pints fresh Cherry Tomatoes (quartered)
  • ¼ cup finely chopped Cilantro
  • ¼ cup finely chopped Yellow or Red Onion
  • ¼ cup thinly sliced Green Onions
  • 1 finely chopped Jalapeno (seeds optional)
  • 3 tablespoons freshly squeezed Lime Juice (about 1-2 limes)
  • 1 tablespoon Extra-Virgin Olive Oil
  • ½ teaspoon Salt
  • Freshly ground Black Pepper (to taste)

 

Steps:

 

1. Combine all ingredients in a bowl or airtight container. Mix thoroughly and cover.

2. Refrigerate for 2 hours or overnight before serving.

 

 

What-A-Day Watermelon Salsa Recipe

 

What You’ll Need:

 

  • 2 cups chopped fresh Watermelon (red or yellow)
  • 2 cups chopped fresh homegrown or farm heirloom tomatoes (or just some perfectly ripe juicy summer ones)
  • ¼ cup finely chopped Cilantro (basil may be added or substituted for an extra twist)
  • ¼ cup finely chopped Sweet Vidalia Onion
  • ¼ cup thinly sliced Green Onions
  • 1 finely chopped small Jalapeno (seeds removed)
  • 3 tablespoons freshly squeezed Lime Juice (about 1-2 limes)
  • 1 tablespoon Extra-Virgin Olive Oil
  • ½ teaspoon Salt
  • Freshly ground Black Pepper (to taste)
  • Lime Zest (to taste)

 

Steps:

 

1. Combine all ingredients in a bowl or airtight container. Mix thoroughly and cover.

Cool As A Cucumber-Pineapple Salsa Recipe

 

What You’ll Need:

 

  • 2 cups chopped fresh Pineapple
  • 1 ½ cups finely chopped peeled seeded fresh homegrown or farm stand cucumbers (or just some perfectly crisp summer ones)
  • 2 tablespoons finely chopped Cilantro
  • 2 tablespoons finely chopped Mint
  • ¼ cup finely chopped Red Onion
  • 1 finely chopped extra small Jalapeno (seeds removed)
  • 4 tablespoons freshly squeezed Lime Juice (about 2 limes)
  • 1 tablespoon Extra-Virgin Olive Oil
  • ½ teaspoon Salt
  • Freshly ground Black Pepper (to taste)
  • Lime Zest (to taste)

 

Steps:

 

1. Combine all ingredients in a bowl or airtight container. Mix thoroughly and cover.
