West Indies Crab Salad

This month we’re bringing you a coastal favorite, West Indies Crab Salad ~ The Southern Scoop’s Recipe of the Month. This dish is great for sharing, or great for not sharing! Either way, you’ll be pleasantly surprised at the fresh, crisp taste that goes great on your favorite bread or our favorite, a saltine cracker. Whether you’re bringing it to a get-together with family and friends,  on a boat to meet up at Crab Island in Destin, or just to keep it on the kitchen island, this recipe is sure to please. This recipe takes about 10 minutes to prep, and 20 minutes to develop the flavor.


What you’ll need:

~ 1 Small Sweet Onion

~ 1 lb. Fresh Lump Crabmeat (From any local seafood market in your vacation area!)

~ 1/2 Cup Canola Oil

~ 1/3 Cup Apple Cider Vinegar

~ 1/2 Teaspoons Salt & Pepper (Optional and to taste!)

~ 1/2 Cup Ice-Cold Water

~ 30 minutes total


Preparation:

Crack your knuckles and prepare to amaze yourself! Grab a large mixing bowl, cutting board, and knife. Meanwhile, make sure you have plenty of space on the counter and lay out all of your ingredients and kitchenware. Take a moment and appreciate what you’re doing! Even if you’re going to just eat this by yourself, it’s an incredible dish that takes an incredibly short amount of time. As a matter of fact, the second or third time you make this, you’ll have memorized it by then!

~ Finely chop the small sweet onion and toss it in the large mixing bowl.

~ Grab the fresh lump crab, toss it in the large mixing bowl on top of the finely chopped onion.

~ Put the 1/2 cup canola oil, 1/3 cup apple cider vinegar, optional portions of salt and pepper, and ice-cold water on top of the lump crab and chopped onion in the large mixing bowl.

~ Mix thoroughly and cover the large mixing bowl with saran wrap.

~ Wait 20 minutes for the flavor to develop.

~ Enjoy!

Your homemade West Indies Crab Salad will keep for a couple of days, however, it’s best enjoyed fresh within a few hours of making it!
