Southern Super Sprouts ~ The Southern Scoop’s Recipe of the Month

Get your family to love their vegetables and maybe even surprise yourself with our Southern Super Sprouts ~ The Southern Scoop’s Recipe of the Month! Known for their incredible nutritional value but less so for their incredible taste! If you’ve got a few minutes and a few limes let’s deconstruct how to get the kids to eat their veggies with a smile! Often inaccurately articulated, they’re actually “Brussels Sprouts”, not “Brussel Sprouts”! Brussels Sprout, or Brassica oleracea is in fact a cruciferous vegetable such as cauliflower, cabbage, garden cress, bok choy, and broccoli! An excellent source of Vitamins B1, C, and K, this super food is a no-brainer! Also an excellent source of dietary fiber, choline, potassium, phosphorus, and omega-3 fatty acids! In 40 minutes or less, you’ll be serving up nutritional excellence to the whole family!

What you’ll need:

~ 2-3 cups of small to medium size Brussels Sprouts (Enough to cover a sheet pan)

~ 2-3 whole lemons

~ Salt and pepper to taste

~ 1/4 stick butter

~ Cookie sheet and large mixing bowl

~ 40 minutes

Preparation:

Let’s get down to business! This entire recipe from prep to completion should take no more than 40 minutes!

Halve your brussels sprouts and toss into the large mixing bowl

Melt the butter in a small bowl (about 15 seconds in the microwave should suffice)

Juice the lemons into the melted butter

Drizzle the contents over the brussels sprouts and toss so as to coat them evenly

Roast on one side for 15 minutes, flip, then roast for another 15 minutes
