Southern Summer Salad ~ The Southern Scoop’s Recipe of the Month
Looking for fresh diet options but don’t want to sacrifice taste? Look no further than our Southern Summer Salad ~ The Southern Scoop’s Recipe of the Month! We’ve provided you with a baseline of ingredients, but feel free to incorporate or substitute as needed to better customize for your family! This dish is perfect for those late work nights or if the kids have a sports game and dinner starts later than usual. This salad can go from raw ingredients to a plated dinner for the whole family in less than 30 minutes!
Featuring fresh fruits and vegetables, vitamins and antioxidants abound in this bright salad. Not just delicious, but aesthetically pleasing as well! The dark green of the spinach is contrasted by the dark blue blueberries and accented by the mandarin oranges. Don’t be embarrassed… we had to take photos of the finished product as well because we were so impressed!
What you’ll need for the Salad (Scale portions according to how many you are serving)
**Most if not all of the ingredients can be found at our local supermarkets such as Publix, Whole Foods, or Fresh Market.
~Spring salad mix
~Green onions, either chopped or whole.
~Strawberries
~Mandarin Oranges
~Blueberries
~Apples
~Dried Cranberries
~Sliced Almonds
~Bleu Cheese
What you’ll need for the Salad Dressing (Scale portions according to how many you are serving)
~1/4 Cup of Canola Oil
~1/4 Almond or Walnut Oil
~3 Tablespoons Apple Cider Vinegar
~1 Teaspoon Vanilla Extract
Kitchen items you’ll need
~Large cutting board
~Appropriately sized knife
~Two mixing bowls, one large and one small
Preparation
~Safely, chop your green onions. Slice your strawberries and apples. Simply break apart your mandarin oranges. Keep the dried cranberries and blueberries whole.
~Empty the contents of your Spring salad mix into your large mixing bowl along with the rest of your ingredients, and toss thoroughly so as to ensure every bite gets a little bit of everything!
~Take all of your salad dressing ingredients and mix thoroughly in the small mixing bowl.
~After both parts of the recipe are thoroughly mixed, drizzle the salad dressing over the top of the salad and mix together thoroughly one last time.
~Plate and enjoy!
